This salad is so incredibly easy to make and even more incredibly delicious.  As you mindfully chew it, you’ll be surprised by all of the delicious flavors that pop out, especially when you get a bite that has spinach, artichoke and sun-dried tomatoes in it.

When I have a party to go to I like to make a large salad by multiplying the ingredients (see below) and pour the dressing on right before serving.  It’s always a hit! So Smart, So Sexy!

[Serves 2]

½ cup artichoke hearts in water, drained and quartered
2 Tablespoons sun-dried tomatoes chopped into small pieces
pinch ground pepper
pinch Sea Salt
3 cups spinach

Dressing
1 Tablespoon Dijon mustard
1 Tablespoon red wine vinegar
1 Tablespoon balsamic vinegar
1 Tablespoon finely chopped shallot
1 garlic clove, finely chopped
1/3 cup extra-virgin olive oil

In a medium bowl mix together artichoke hearts, sun-dried tomatoes, salt & pepper & combine.  Mix in spinach.

Mix all salad dressing ingredients together except oil. Slowly drizzle in oil while whisking, until it is blended together.   Mix together with salad and enjoy!

 **To make it for a large group**
(serves approximately 12)

2 cans artichoke hearts in water, drained and quartered
1 3 oz bag sun-dried tomatoes chopped into small pieces (I get mine at Trader Joe’s)
pinch ground pepper
pinch Sea Salt
1 11oz container of spinach

Dressing
2 Tablespoon Dijon mustard
2 Tablespoon red wine vinegar
2 Tablespoon balsamic vinegar
2 Tablespoon finely chopped shallot
2 garlic cloves, finely chopped
2/3 cups extra-virgin olive oil
