A turnip is one of those root veggies that often gets overlooked.

Screen Shot 2016-06-16 at 11.12.55 PMI’ll admit that I was one who snubbed her nose to this slightly bitter tasting root veggie until I found that when sliced thin and paired with this Spinach Pesto it is amazingly delicious.

Similar to radishes, raw turnips are both Smart and Sexy as they serve as a digestive aid and are good for a general detoxification.

I think you’ll find this little treat is filling, satisfying and all around delicious! It’s great as an appetizer, snack or even a side.

Spinach Cashew Turnip Rounds

1 cup raw cashews
1 Tablespoon lemon juice
Zest of 1 Lemon
2 teaspoon tamari, low sodium, gluten free
2 cloves garlic
4 cups spinach

12-16 turnip rounds (use a mandolin or spiral slicer to cut thin rounds from peeled, large turnip)

Blend cashews, lemon juice, lemon zest, tamari, garlic, and spinach in a food processor until smooth. Take one slice of turnip and place approximately 1 tablespoon of the filling in the center of the turnip round. Serve and Enjoy!

To store any unused Turnip Rounds: place in a container filled with water. Store for 3-4 days
