I seem to take the slow train to transition into “new” things…is it just me?

For instance, I’m not a big t.v. watcher but it took me until this year to start watching Downton Abbey and now I’m a tad bit obsessed.  I am now watching it again, thank you Amazon Prime Instant watch!

I also have trouble transitioning into seasons.  It’s not until the season is almost over that I want to do all the things the season allows.

And the same is true for foods that are in season.  Now that summer is almost over I can’t get enough of blueberries or strawberries.  I am working on getting better.

Until then, I’m going to enjoy the last of the summer berries with this little delight of a recipe that is in my Smart Sexy Summer Cleanse.

It’s super easy to make, very low in sugar (I’m doing a 21-day sugar-free challenge with a friend so I omitted the brown rice syrup and it was fine…well, ok, it would have been nice with a little sweetener but once the berries were mixed in I couldn’t notice) and a great breakfast, snack or dessert.

[Serves 2]

½ cup soaked raw cashews (soak at least 20 minutes – up to an hour)
½ cup unsweetened almond or coconut milk from a carton (not canned)
1 teaspoon Brown Rice Syrup
½ teaspoon vanilla
1/8 teaspoon grated ginger
1/3 cup rolled gluten-free oats (no need to cook these!)
1 tablespoon hemp or chia seeds
1 cup berries (chopped if using larger berries such as strawberries)

Combine cashews, milk and vanilla in a blender and blend until smooth. Layer ingredients in a small cup: Dollop of cream, spoonful of berries, top with oats and hemp seeds and enjoy!
