I LOVE popcorn.  Despite the fact that it makes me tired when I eat it, as I confessed on this Dr. Oz episode it is one of the foods I can’t turn down. (I used to eat it almost daily, now, I’m down to maybe 3 times per month…baby steps!).

And, like just about any other woman, I LOVE chocolate.

Add chocolate and popcorn together and I am one (tired) happy girl.

I ALWAYS buy organic kernels and pop them myself.  It’s really just as easy as popping them in a microwave (want to know why microwave popcorn is deadly?  Check out this blog post from the Food Babe)

I have to apologize in advance, this little snack is addictive. Try to control yourself and share with others (as I just finished off a bowl by myself…ugh..).

2 tablespoons coconut oil
¼ cup organic popcorn
2 tablespoons Enjoy Life Chocolate Chips
Sea Salt to taste

Over medium heat in a medium size pot, place 1 tablespoon coconut oil and a couple of popcorn kernels, cover.  After kernels have popped add in remaining kernels (and cover again).  Popcorn is done popping when you there are 3 seconds between pops. Turn off heat and pour popcorn into a bowl.

In the same pot that you popped the popcorn in, place the remaining 1tablespoon coconut oil and 2 tablespoons chocolate chips (the pot is still hot enough to melt them without needing to turn on the heat).  I like to tilt the pot to the side so that the oil and the chips are in a small spot in the pan, making it easier to melt together. 

When chips are melted, pour over popped corn; toss to mix together.  Sprinkle with sea salt to taste. Enjoy!
