When I was growing up I hated vegetables, especially Brussels Sprouts.  Wow, have I changed!

Now, I love them….sautéed, roasted, and even raw.  Seriously.  Raw.

These crazy looking little cruciferous, leafy greens are packed with glucosinolates, sulfur-containing nutrients, vitamin C, beta-carotene and manganese, all which aide our bodies in detoxing so we can stay healthy and clean.

Raw Brussels Sprout Salad with Tangy Mustard DressingScreen Shot 2016-06-15 at 11.45.02 PM

[Serves 4-6]

1 bag Brussel Sprouts
¼ cup Shredded Carrots
¼ cup Organic Raisins
¼ cup Cashews
1 large apple, diced
1 teaspoon Seasame Seeds

4 teaspoons Coconut Nectar
2 Tablespoons Apple Cider Vinegar
2 Tablespoons Dijion Mustard
2 Tablespoons Extra-Virgin Olive Oil
¼ teaspoon Cinnamon

Cut the bottoms off the Brussels Sprouts, cut in quarters and place in a food processor to shred. Mix together remaining ingredients.

Whisk all ingredients together until combined.  Mix into salad and enjoy!
