I really have a thing for Chia Seeds. And for foods that are easy to make.
This pudding is super easy to make–although it’s not quick, you’ll have to wait overnight for the Chia Seeds to do their thing but it will be well worth it.

Chia Seeds: If you love texture in your food then you will I love chia seeds. And, they are rich in polyunsaturated fats, especially omega-3 fatty acids. Omega-3’s are great for reducing inflammation, enhance cognitive performance and reduce high cholesterol.
Pumpkin Puree: Poor pumpkin…I think that more of them get left out on the porch rather than brought into our tummies. We often overlook it and miss out on a great source of fiber, which helps keep us full longer. And, since it contains beta-carotene they are also cancer fighting.
Pumpkin Chia Pudding
1 1/2 cups non-dairy milk
3 Tablespoons Chia seeds
1 cup pumpkin purée
2 Tablespoons maple syrup
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1/2 teaspoon vanilla extract
Garnish with a few crushed walnuts or nuts of your choice.
Mix together the milk and chia seeds & let sit for about 5 minutes, stirring frequently.
Mix pumpkin purée, maple syrup, cinnamon, nutmeg, allspice, and vanilla extract into almond milk chia mixture. Let sit overnight. Enjoy!
