I love having healthy snacks on hand that I can grab-n-go.  And, I love it when they are satisfying without adding in sweeteners.

These little bites are so great for many reasons. The almonds support the digestive tract; the cashews are high in magnesium; coconut is nurturing to the body and helps to build up energy. Dates provide sweetness and the lime is alkalizing for our bodies.

What’s not to love about these?

Key Lime Energy Bites

Makes: approximately 24 “balls”

1 cup almonds (soaked for 20 minutes)
1 cup cashews (soaked for 20 minutes)
1 cup unsweetened shredded coconut, 
plus extra for rolling balls
12 medjool dates, pitted
juice & zest of 2 limes
1-2 T of water if needed


In a food processor, process the cashews, coconut and almonds until they are ground, leaving some big chunks. Remove and put into a bowl.

Process the dates, lime juice and lime zest until sticky and the consistency of paste.  Mix the nuts/coconut mixture with the date/lime mixture (using your hands is best).

If the dough looks a bit dry, you can add a few tablespoons of water to help it come together.

Moisten hands, and roll dough into 1-inch balls. If you occasionally moisten your hands it is easier to roll balls.  Roll them into the coconut to coat.  Place in freezer 20 minutes to set, then serve or store in the fridge. Enjoy!
