When I was going to school for health coaching I found this simple & delicious Rice recipe from Alex Jamieson that I love (remember Super-Size Me?  Alex helped Morgan Spurlock get healthy after eating McyD’s for way longer than any human should)   It gives a different twist to plain ole’ brown rice that you are sure to enjoy.

What’s Smart & Sexy About This Dish?

Brown Rice–I don’t think it needs to be said that brown rice should always be chose over white rice since it is the unrefined version of white rice (and we want our foods to be unrefined as much as possible).

For that reason alone, Brown rice is a smart, sexy choice since it doesn’t spike the blood sugar levels like white rice (if you are looking to lose weight or control blood sugar Brown Rice is for you).

Curry PowderI’m going to be honest, curry isn’t one of my favorite spices but there is something about it in this dish that I love.  Curry is great because it helps to boost immunity, eases digestion and reduces the risk of cancer.

[Serves 6]

2 cups brown rice
2 15-oz. cans unsweetened coconut milk
1 Tb. curry powder
1 tsp. salt
½ tsp. cayenne powder
½ cup raisins

Wash the brown rice and drain into a medium saucepan.

Add the coconut milk, curry powder, salt and cayenne powder, stirring to combine.

Place over medium-high heat, cover and bring to a boil.

When rice begins to boil, turn the heat down to low and allow to simmer for 30-45 minutes, adding another ½ cup of water if necessary.

When the rice is cooked through, add the raisins and stir to incorporate, then recover and allow to sit for 10 minutes.

Serve hot or cold.
