What’s Smart & Sexy About This Dish?

Besides for the fact that it’s super easy to make, this is a very smart & sexy dish because it has veggie, a little nut and fruit and a few spices–the makings of every Smart & Sexy dish.

Brussels Sprouts are high in fiber and are nutrient dense which help you to lose weight and keep your blood sugar levels stable.

Nutritional Yeast, believe it or not contains protein.  2 tablespoons contain 9 grams to be exact, which is more than 1 glass of milk or 1 egg.  And, like Brussels Spouts, it contains fiber which keeps your insides clean.

[Serves 6-8]

6 tbsp extra-virgin olive oil
¼ cup nutritional yeast
3 tbsp lemon juice
1 tbsp dijion
2 tsp shallot, minced
2 cloves garlic, minced
½ teaspoon sea salt
¼ teaspoon black pepper

Combine extra-virgin olive oil, nutritional yeast, lemon juice, dijon mustard, shallot, garlic, salt, and pepper in a small bowl.  Mix together and set aside.

½ cup almonds, coarsely chopped
14 (approximately) brussel sprouts, finely grated (you an use a mini-cuisinart)
1 bunch of kale, center stem discarded, leaves thinly sliced
1 pear or apple, cubed

In a large bowl combine the almonds, grated brussel sprouts, kale and pear (or apple).  Pour the dressing over the salad and massage in to the salad with your hands.  Enjoy!
