When I was transitioning away from sugar these were a life-saver!

They are so delicious you’ll wonder how you got through life without them. I gave you a recipe that makes a very large batch (cook once, eat multiple times J), cut them up and freeze them & you’ll have treats to grab & go when you are in a hurry).

What’s Smart & Sexy about these?

1) They are gluten-free–so everyone can enjoy them (unless you have a nut allergy, then you’re outta luck).

2) They are sweetened with Brown Rice Syrup– As far as glycemic levels go, brown rice syrup has one of the lowest at 25 (out of 100).

It is made from ground, cooked brown rice that is mixed with enzymes that change the starch into maltose. Some brown rice syrups can contain gluten, so if you are avoiding gluten, you want to be careful that the brand you are purchasing does not (such as Suzanne’s Nectars).

3) They are incredibly easy to make. Seriously, a 4 year old could make them.

4) This recipe makes a lot–I love cooking 1x and eating multiple times.  Make a big batch then freeze them for a grab-n-go treat.

INGREDIENTS
1 box Crispy Brown Rice Gluten Free Cereal (Erewhon Brand)
1 16 oz jar brown rice syrup
1 16 oz jar unsweetened peanut butter
(Optional) 2 cups Enjoy Life Brand Chocolate Chips

In a medium pot over low heat, place peanut butter and brown rice syrup together. In a very large bowl, pour in cereal and chips.  Pour in the peanut butter and brown rice syrup mixture and stir in together (if using chips, stir in now).

Pour the mixture into 1 large and 1 smaller flat glass Pyrex dish (can use 1 large depending on how thick you want them–or a large cookie sheet tray) and flatten out. Put in freezer for about 1 hour to harden. Remove from freezer and when it is soft enough, cut into pieces and put in freezer bags for an easy grab-n-go treat!
