If you were one of the Smart Sexy women who did my Summer Cleanse then you will recognize this recipe.  It has become one of my go-to’s for breakfast, snack & sometimes even dinner.

If you didn’t do the summer cleanse…well, you are getting lucky today! (There’s going to be an autumn one coming soon–don’t miss out!)

It’s soooo incredibly easy to make and pretty fool-proof!

Chia seeds are great for fiber and Omega-3 fats (making our brains smart).

Blueberries are wonderful medicine for our blood and liver so eat as much as you want (well, try not to eat so much that you will swell up like Violet Beauregarde in Willie Wonka…that wouldn’t be so good)!

Blueberry Lemon Chia PuddingIMG_3590

[Serves 2]

INGREDIENTS

1 ½ cups unsweetened almond or coconut milk (in a carton, not canned)
¼ cup chia seeds
Zest of 2 lemons
1 pint of blueberries

Mix all ingredients in a bowl and refrigerate for 3-4 hours or overnight.
