I have no idea where I saw this recipe but I had to make it once I saw it.
Yes, I definitely wondered if they would be gross but I was too curious to let that stop me.
My nephews (2 & 5) were over and we made them together and they passed their taste-bud tests (I had to make 2 more batches).
They are soooo easy to make–you really can’t screw them up.
After eating them you don’t have that bloated feeling you’d normally get from pancakes and you really feel satisfied. Once you try these pancakes you may never want to go back!
Banana Egg Pancakes
[Makes approximately 6-8]
1 ripe banana, mashed
2 organic, free-range eggs
¼ – ½ teaspoon cinnamon
½ teaspoon vanilla extract
coconut or extra-virgin olive oil
In a medium size bowl, mash your banana with a fork. Crack open the eggs into the bowl and mix together. Mix in cinnamon and vanilla extract.
In a pan, on medium-low heat add in a splash of coconut or extra-virgin olive oil and about ¼ cup of the banana egg mixture. Let the pancake set for about 30-45 seconds. Flip when bottom side is set and cook to your liking.
I think these are great just how they are and don’t need any kind of garnish (i.e. sweetener or butter) but I bet they’d be great with some berries and maybe even some chia seeds tossed in….hmmm…maybe I’ll do that tomorrow!
