When the seasons start to change from warm to cold, there is nothing better than a treat that comes out of the oven.
And, when that treat isn’t filled with sugar and other crap it’s even better.
I love baked apples because they not only satisfy my desire for something warm but they are also naturally sweet–satisfying my desire for something sweet without the added sugar.

Apples: The soluble fibers in apples binds with fats in the intestines, which means that they help to lower cholesterol.

Cinnamon: Known for helping to keep blood sugar levels stable, cinnamon is a great spice to keep in rotation.
Baked Stuffed Apple
[serves 1 but of course you can easily multiply it]
2 tablespoons oats
2 tablespoons raisins
1 tablespoon oil
1 ½ teaspoons cinnamon
2 tablespoons Almond Butter
Cut off the top of the apple (and bottom if the bottom isn’t flat).
Core out the middle of the apple (do not go all the way to the bottom, leave some bottom so the stuffing doesn’t leak out).
Mix together oats, raisins, and oil and stuff into apple. Place in a glass pyrex or baking dish.
Bake at 350° for 45 minutes.
Let cool for a few minutes then top with Almond Butter and enjoy!
